True Ampelos takes its name from the scriptural image of the true vine. A refined vineyard-inspired hospitality: more layered courses, considered wines, and seasonal detail brought slowly to the table.
The Shared Table
True Ampelos is a refined vineyard register. Courses are more layered, wines chosen with greater care, and seasonal flourishes brought slowly to the table. The evening lingers in restraint — candlelight, considered pairings, and a table that rewards attention.
Amuse / Opening Table
- Warm focaccia, sourdough, and flatbreads
- Olive oil, cultured butter, whipped feta, and whipped labneh
- Marinated olives with herbs and red-wine vinegar
- Small seasonal vegetable antipasti with roasted grapes and herbs
- Sparkling wine for welcome or bridal toast
Entrée
- Grilled Mediterranean octopus with lemon, smoked paprika, olive oil, and verjuice dressing
- Roasted red pepper and walnut muhammara
- Mixed greens with citrus and verjuice vinaigrette
- Paired with crisp Australian Sauvignon Blanc
Main Courses / Alternating Plates
- Meat — Slow-roasted lamb leg with rosemary, garlic, and Shiraz reduction. Served with saffron freekeh, roasted seasonal vegetables, and tahini yoghurt. Paired with Australian Shiraz.
- Fish — Barramundi en papillote with herbs, preserved lemon, and white wine. Served with roasted baby vegetables and lemon-scented couscous. Paired with Australian Chardonnay.
- Vegetarian — Moussaka with layered eggplant, zucchini, tomato, and béchamel. Served with roasted seasonal vegetables and tahini yoghurt drizzle. Paired with Australian Sauvignon Blanc.
Dessert
- Orange and almond cake with cardamom cream
- Honey panna cotta with roasted grapes and pistachio
- Affogato with vanilla ice cream and optional small pour of Amaretto
Sparkling and still water are offered throughout the evening. Beer and soft drink alternatives remain available upon request for guests who would prefer them.
